Mavis met Dennis' father when she was 118 and announced her pregnancy "a few years later" so she would be at least 120 when he was born and 122 when he was two.
This means the 2nd birthday would take place at least 8 years after the prequel series, so Winnie should not have even been conceived yet.
The only answer is that time travel exists...
Which we already know because in the prequel series, Mavis travels back to when she's a baby and her father is just setting up the hotel for her.
